  • For the Tzatziki Dip:
  • 1 cup plain Greek yogurt
  • 1/2 cucumber finely grated and excess water squeezed out
  • 1 tbsp fresh dill chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • Salt and pepper to taste

Method
 

  1. Heat the Oil: Heat the olive oil in a large skillet over medium heat.
  2. Cook the Meatballs: Once the oil is hot, add the meatballs to the pan in batches, making sure not to overcrowd the skillet. Cook for about 4-5 minutes on each side, or until golden brown and fully cooked through. The internal temperature should reach 165°F (74°C).
  3. Remove and Rest: Once cooked, remove the meatballs from the skillet and let them rest on a paper towel-lined plate to drain excess oil.
  4. Make the Tzatziki: While the meatballs are cooking, prepare the tzatziki dip as outlined above. Set it aside to allow the flavors to meld together.
  5. Serve the Meatballs: Arrange the meatballs on a serving platter, and drizzle with the homemade tzatziki dip or serve it on the side for dipping.
  6. Garnish: For extra flavor, sprinkle the meatballs with more fresh parsley or a squeeze of lemon juice.
  7. Enjoy: Serve these meatballs immediately while they’re warm. They’re delicious on their own or paired with a side of quinoa or a fresh Greek salad.
  8. Optional: If you prefer, you can also bake the meatballs in a preheated oven at 375°F (190°C) for 20-25 minutes, turning halfway through.
